The current classification of rum as merely “Light,” “Gold” and “Dark” is completely erroneous, and provides no information regarding the actual production methods, territory, cultural/historical aspects or flavor characteristics of the spirit. In order to truly understand rum, this presentation explores the technical side of rum production, especially as it relates to different types of stills – the Pot Still and the Multi-Column Still. We investigate the cultural traditions of Caribbean rum production and how this has evolved into the use of different stills over time.
